ETA: Here is the full story. Apparently it's a Colombian restoration with a modern twist. It seems very similar to the gorgeous monastery-turned-luxury-hotel, el Convento, my parents and I stayed in in Leon, Nicaragua last month. It is beautiful and calm, historic and modern. Basically, I just found my dream home.
